The Cataldino is a Montepulciano vinified entirely in white with spontaneous fermentation at 18/20 degrees. The end result is not a Cerasuolo but a pale rosé, whose color, considering some varieties of coppery onions, could be called onion peel. We used IGT Terre Aquilane because our DOCs do not include the use of the Rosato denomination. Extraordinary gastronomic drinking and versatility.
